Heavenly rhubarb!

You think we'd get sick of it after a while ... but ... No way! Rhubarb rocks! We can't get enough of it. It's pretty. It's pink and most importantly it's yummmmmmmmmmmmmy!

This is actually my first entry about baking! Shocking but true! To make it special i couldn't resist dedicating it to rhubarb (and upon a special wish of sister A. to cherries and apples).

Attention ladys: This recipe is completely without butter! Yes! No butter and only a tiny bit of sugar! I just won't mention the 400 ml cream ;o) The dough is fluffy and soft and melts on the tongue ... Definitely bowl-lickinglicous! I think i actually started purring while licking the bowl clean!



Next step: Select your fruits of the day and do all the necessary cleaning and cutting and slicing. Spread the dough out on a baking tray and decorate the prepared fruits on this little piece of heaven ... My colour scheme today: pink-red-cherrie-sweetness. Doesn't it look fantastic?




















Pop it in the oven, give it about 40 minutes and enjoy the smell that wafts through the whole apartment! For the final finishing touch i just melted some smooth passion fruit jam and added a dash of lemon zest to it. As soon as the cake was out of the oven i spread the passion fruit-lemon-juice on it and let it stand to cool.

So easy but so goooooooooooooooooooood! Voila, another fabulous cake is done!













Indulge, enjoy and always remember: there's absolutely no butter in this cake!
